Abstract
The coyol (Acrocomia aculeata) is a palm native to the warm regions of southern Mexico, whose fruit is an integral part of local tradition. Beyond its gastronomic use, this resource can serve as the basis for a biorefinery. Its oil can be used in food, cosmetics, and clean fuels; the pulp in sweets, bioethanol, or biogas; and the shell in activated carbon or thermal energy. This article presents its origin, advantages, and challenges, as well as a pathway for the integral use of the fruit. Community use of coyol represents an opportunity to boost the regional bioeconomy with social and environmental benefits.
